We are looking for an experienced Baker to join our team! You will be responsible for opening the café daily, as well as assisting to run the kitchen through the morning shift. Tonglen Lake Lodge is small, upscale lodge located just minutes away from Denali National Park. It is a seasonally run operation (mid-May through mid-September) of 10 guest cabins and 5 guest rooms that functions as a bed and breakfast. The café and grounds, however, are open to the public and a focal point for local artisans, community members, performers and private events. Staff includes 15-20 people. Duties include: • Opening & starting up kitchen • Baking daily for AM service, including but not limited to scones, muffins, quiche & specials. • Creating other AM options including hot cereal combinations, cold cereal options, preserves, etc. • Baking daily to support evening service, including bread for small plates and to-go lunches • Mixing and baking regularly as needed granola, cookies, brownies and bars, etc. • Prepping dry ingredients, add ins, for following days’ baking • Baking desserts for special events as needed (pies, cakes, bars, tarts, etc.) • Preparing and serving breakfast to pre-arranged early departures • Making espresso drinks, plating dishes and supporting front of the house operations as needed during hours of service • Doing dishes as part of a kitchen-wide collaborative effort • Keeping menu board current and assisting front of the house staff in understanding daily options and ingredients • Cleaning work spaces and maintaining utmost cleanliness in all realms • Leading as a model in hygiene in the kitchen • Providing exceptional front of the house customer service as needed and being generally familiar with all cafe operations Requirements: • Ability to be a “morning person” • Interest in baking and preparing high quality foods in small batches • Positive attitude and interest in contributing talents and energy toward the efforts at Tonglen Lake • Ability to interact respectfully with coworkers in a lighthearted, but hard-working atmosphere • Ability to be flexible • Alaska Food Worker’s Card (available online) Desired Skills and Experience: • Previous commercial bakery and/or kitchen experience desired • Knowledge and experience in artisan breads desired • The ability to work both independently, and as part of a team If you are interested in joining our team in remote Alaska for a seasonal summer position, please apply!
